Instructions

- In another bowl, mix flour, sugar, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Drop heaping tablespoons of dough onto a parchment-lined baking sheet.
- Bake for 10-12 minutes or until the edges turn golden.
- Cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
For a dairy-free version, substitute Cool Whip with coconut whipped topping. You can also use brown sugar for a hint of molasses flavor.
