- 2 lbs pork shoulder or butt, cut into cubes
- 6 slices thick-cut bacon, chopped
- 2 apples, cored and chopped (mix of Granny Smith and Honeycrisp)
- 1 cup prunes, pitted and halved
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 4 cups chicken or vegetable broth
- 2 tsp fresh thyme
- 2 bay leaves
- Salt and pepper, to taste
- Optional: apple cider vinegar, to taste
Instructions
- Prepare the ingredients: Chop vegetables and slice apples and prunes.
- Brown the bacon in a large pot over medium heat until crispy. Remove and set aside, leaving fat in the pot.
- Sauté onions in bacon fat until translucent, then add garlic and cook for 30 seconds.
- Brown pork cubes in batches in the same pot, ensuring all sides are caramelized.
- Return bacon to pot and add carrots, celery, apples, and prunes. Stir to combine.
- Pour in the broth and add herbs, salt, and pepper. Bring to a simmer.
- Cover and cook on low heat for 1.5 to 2 hours, stirring occasionally.
- Adjust seasoning to taste and serve warm with crusty bread or over mashed potatoes.
Notes
For added flavor, consider incorporating mushrooms or swapping in other meats like chicken or turkey. This stew can be frozen for up to three months.
