- 4 boneless chicken breasts or thighs
- 2 cups gravy (store-bought or homemade)
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken or vegetable broth
- 1 cup mushrooms (cremini or button), sliced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Prepare the chicken by patting it dry and seasoning with salt and pepper.
- Sauté chopped onions and minced garlic in a skillet over medium heat until fragrant.
- Layer the sautéed onions and garlic in the bottom of the crockpot, then place the chicken on top.
- Add sliced mushrooms and any additional vegetables.
- Mix the gravy with broth in a bowl and pour it evenly over the chicken.
- Sprinkle the herbs over the mixture and adjust seasonings.
- Cover and cook on low for 6–8 hours or high for 4–6 hours.
- Serve over mashed potatoes or rice, garnished with fresh herbs.
Notes
This dish can be frozen for up to 3 months. Thaw and reheat when ready to serve.
