Description

Ingredients

  • 4 boneless chicken breasts or thighs
  • 2 cups gravy (store-bought or homemade)
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken or vegetable broth
  • 1 cup mushrooms (cremini or button), sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by patting it dry and seasoning with salt and pepper.
  2. Sauté chopped onions and minced garlic in a skillet over medium heat until fragrant.
  3. Layer the sautéed onions and garlic in the bottom of the crockpot, then place the chicken on top.
  4. Add sliced mushrooms and any additional vegetables.
  5. Mix the gravy with broth in a bowl and pour it evenly over the chicken.
  6. Sprinkle the herbs over the mixture and adjust seasonings.
  7. Cover and cook on low for 6–8 hours or high for 4–6 hours.
  8. Serve over mashed potatoes or rice, garnished with fresh herbs.

Notes

This dish can be frozen for up to 3 months. Thaw and reheat when ready to serve.
