- 2 sprigs fresh thyme
- 2 sprigs fresh parsley
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp olive oil or butter
Instructions
- Gather all your ingredients and dice your onions, garlic, and vegetables. Cut the chicken into bite-sized pieces.
- In a large pot, heat olive oil or butter over medium heat and sauté diced onions and garlic until soft and fragrant (3-5 minutes).
- Stir in the diced chicken and cook until browned (about 5-7 minutes).
- Add potatoes, carrots, celery, and pour in the chicken broth, ensuring everything is submerged. Season with salt and pepper.
- Add thyme, parsley, and the bay leaf. Allow herbs to steep as it cooks.
- Bring to a gentle boil, then reduce heat and let simmer uncovered (20-30 minutes) until the chicken is cooked through and potatoes are fork-tender.
- Taste the soup and adjust seasoning as needed. Serve hot, garnished with fresh parsley.
Notes
Skim off any foam during cooking for a clearer broth. For creamier soup, mash some potatoes directly in the soup.
