Description

A heartwarming and flavorful beef stew filled with tender beef, root vegetables, and aromatic herbs, perfect for family gatherings.


Ingredients

  • 2 lbs beef (chuck or brisket), cut into 1-2 inch cubes
  • 2 yellow onions, chopped
  • 4 cloves of garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 bay leaves
  • 1 cup red wine (optional)
  • Salt and pepper to taste
  • Oil for searing

Instructions

  1. Season the beef cubes generously with salt and pepper.
  2. Heat a large Dutch oven over medium-high heat and add oil.
  3. Sear the beef in batches until browned, then remove and set aside.
  4. Sauté the onions until soft and caramelized, about 5-7 minutes.
  5. Add minced garlic and stir for an additional minute.
  6. Stir in tomato paste and add red wine, scraping the bottom of the pot.
  7. Return the beef to the pot and add beef broth, root vegetables, herbs, and bay leaves.
  8. Cover and simmer on low heat for 2-3 hours or transfer to an oven at 325°F for even cooking.
  9. Adjust seasoning before serving, and remove bay leaves.

Notes

For adaptations, feel free to substitute with seasonal vegetables or use venison or lamb for different flavors. Leftovers can be stored in the refrigerator for up to three days or frozen for up to three months.
