  • 1 cup Snap Peas
  • Fresh Cilantro or Thai Basil
  • 1 Lime, juiced
  • Fresh Chilies or Chili Paste (to taste)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add minced garlic and grated ginger, sauté for 1-2 minutes.
  2. Pour in broth and coconut milk, stirring well. Bring to a gentle simmer.
  3. Add chopped vegetables and simmer for 5-7 minutes until slightly tender.
