A rich and creamy layered crepe cake filled with delightful coconut cream and topped with coffee glaze.
Ingredients

- 1 cup all-purpose flour
- 2 large eggs
- 1 cup whole milk (or coconut milk for dairy-free)
- 1 teaspoon vanilla extract
- 1 can full-fat coconut cream
- 1 cup powdered sugar
- 2 tablespoons brewed espresso or strong coffee
- Toasted coconut flakes (for topping)
- Whipped cream (for topping)
- Additional coffee drizzle (optional)
Instructions
- In a mixing bowl, whisk together flour, eggs, milk, and vanilla until smooth. Let it rest for 30 minutes.
- Heat a non-stick skillet over medium heat. Grease lightly, pour in batter, swirl to coat, and cook for 1-2 minutes. Flip and cook an additional minute. Repeat until all crepes are cooked.
- In another bowl, beat coconut cream, powdered sugar, and espresso until smooth and fluffy.
- Layer crepes on a serving dish, spreading coconut cream between each layer and finishing with a layer of coconut cream on top.
- Chill in the fridge for at least 2 hours.
- Before serving, garnish with toasted coconut flakes, whipped cream, and a coffee drizzle if desired.
Notes
For variations, you can add cocoa powder for a chocolate flavor or fresh fruits such as strawberries or mango between the layers.
