Description

Deliciously rich and chewy brownies with a twist of tropical coconut, perfect for family gatherings and special occasions.


Ingredients

  • 1/2 cup unsalted butter (or coconut oil)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (or almond/gluten-free flour)
  • 1/3 cup unsweetened cocoa powder
  • 1 cup shredded coconut
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8 inch baking pan or line it with parchment paper.
  3. In a saucepan over low heat, melt the butter. Stir in the granulated sugar and brown sugar until combined.
  4. Remove from heat, cool slightly, and stir in the eggs one at a time, followed by the vanilla extract.
  5. In a separate bowl, whisk the flour, cocoa powder, and salt together, then fold into the butter mixture until just combined.
  6. Fold in shredded coconut and chocolate chips if desired.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 25-30 minutes until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Allow to cool for 10 minutes in the pan, then transfer to a wire rack to cool completely before cutting.

Notes

Use room temperature ingredients for better blending, and don’t overmix to keep brownies fudgy.
