- 1/2 cup unsalted butter (or coconut oil)
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour (or almond/gluten-free flour)
- 1/3 cup unsweetened cocoa powder
- 1 cup shredded coconut
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease an 8×8 inch baking pan or line it with parchment paper.
- In a saucepan over low heat, melt the butter. Stir in the granulated sugar and brown sugar until combined.
- Remove from heat, cool slightly, and stir in the eggs one at a time, followed by the vanilla extract.
- In a separate bowl, whisk the flour, cocoa powder, and salt together, then fold into the butter mixture until just combined.
- Fold in shredded coconut and chocolate chips if desired.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 25-30 minutes until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow to cool for 10 minutes in the pan, then transfer to a wire rack to cool completely before cutting.
Notes
Use room temperature ingredients for better blending, and don’t overmix to keep brownies fudgy.
