Ingredients

- 1 lb boneless chicken (breast or thighs)
- 8 oz fresh mushrooms (cremini or shiitake)
- 2 cloves garlic, minced
- 1 onion, finely diced
- 4 cups chicken broth
- 2 tbsp fresh parsley or thyme
- 2 tbsp olive oil or butter
- Salt and pepper to taste
Instructions
- Heat olive oil or butter in a large pot over medium heat. Add diced onions and minced garlic, cooking for 3-5 minutes until softened.
- Add chicken pieces and sauté until golden brown on all sides, about 5-7 minutes.
- Stir in sliced mushrooms and cook until they soften, around 5 minutes.
- Pour in chicken broth, bring to a boil, then reduce to simmer for 20 minutes until chicken is cooked through.
- Season with salt and pepper, and stir in fresh herbs.
- Optional: Shred chicken for a heartier soup and return to the pot.
- Ladle soup into bowls, garnish with herbs, and serve hot with toasted bread.
Notes
For a vegetarian swap, use tofu or chickpeas and vegetable broth instead of chicken.
