Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 8 oz fresh mushrooms (cremini or shiitake)
  • 2 cloves garlic, minced
  • 1 onion, finely diced
  • 4 cups chicken broth
  • 2 tbsp fresh parsley or thyme
  • 2 tbsp olive oil or butter
  • Salt and pepper to taste

Instructions

  1. Heat olive oil or butter in a large pot over medium heat. Add diced onions and minced garlic, cooking for 3-5 minutes until softened.
  2. Add chicken pieces and sauté until golden brown on all sides, about 5-7 minutes.
  3. Stir in sliced mushrooms and cook until they soften, around 5 minutes.
  4. Pour in chicken broth, bring to a boil, then reduce to simmer for 20 minutes until chicken is cooked through.
  5. Season with salt and pepper, and stir in fresh herbs.
  6. Optional: Shred chicken for a heartier soup and return to the pot.
  7. Ladle soup into bowls, garnish with herbs, and serve hot with toasted bread.

Notes

For a vegetarian swap, use tofu or chickpeas and vegetable broth instead of chicken.
