Instructions
- Prepare ingredients: chop chicken, slice mushrooms, mince garlic, and dice carrots and celery.
- In a large pot, heat olive oil over medium heat and sauté garlic until fragrant.
- Add chicken pieces and cook until lightly browned.
- Toss in sliced mushrooms, carrots, and celery, allowing them to soften.
- Pour in the chicken broth and bring to a gentle simmer. Season with salt, pepper, and fresh herbs.
- Lower heat, cover, and let simmer for 15-20 minutes.
