Description
A hearty and comforting stew made with tender beef, vibrant carrots, and earthy potatoes, seasoned with fresh herbs and red wine.
Ingredients

- 2 lbs chuck roast or stew meat, cut into 1–2 inch cubes
- 4 medium carrots, chopped
- 4 medium potatoes, chopped
- 1 large onion, chopped
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine (or additional beef broth)
- 2 bay leaves
- 1 tablespoon fresh thyme
- Salt and pepper, to taste
- 2 tablespoons oil for searing
Instructions
- Season beef cubes generously with salt and pepper. Heat oil in a large pot over medium-high heat and sear beef in batches until browned on all sides.
- Add chopped onions and celery to the pot and sauté for about 5 minutes until softened. Add minced garlic and cook for another minute.
- Deglaze the pot with red wine, scraping the bottom to release browned bits. Let simmer for a couple of minutes.
- Return the beef to the pot and add chopped carrots, potatoes, bay leaves, thyme, and beef broth until submerged.
- Bring to a gentle boil, then reduce heat to low, cover, and simmer for 2-3 hours, stirring occasionally.
- Taste and adjust seasoning before serving.
Notes
For added richness, consider including mushrooms or serving with some fresh crusty bread. This stew also freezes well for up to 3 months.
