Description

A hearty and comforting stew made with tender beef, vibrant carrots, and earthy potatoes, seasoned with fresh herbs and red wine.


Ingredients

  • 2 lbs chuck roast or stew meat, cut into 12 inch cubes
  • 4 medium carrots, chopped
  • 4 medium potatoes, chopped
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine (or additional beef broth)
  • 2 bay leaves
  • 1 tablespoon fresh thyme
  • Salt and pepper, to taste
  • 2 tablespoons oil for searing

Instructions

  1. Season beef cubes generously with salt and pepper. Heat oil in a large pot over medium-high heat and sear beef in batches until browned on all sides.
  2. Add chopped onions and celery to the pot and sauté for about 5 minutes until softened. Add minced garlic and cook for another minute.
  3. Deglaze the pot with red wine, scraping the bottom to release browned bits. Let simmer for a couple of minutes.
  4. Return the beef to the pot and add chopped carrots, potatoes, bay leaves, thyme, and beef broth until submerged.
  5. Bring to a gentle boil, then reduce heat to low, cover, and simmer for 2-3 hours, stirring occasionally.
  6. Taste and adjust seasoning before serving.

Notes

For added richness, consider including mushrooms or serving with some fresh crusty bread. This stew also freezes well for up to 3 months.
