Instructions
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, sugar, and salt.
- In another bowl, whisk together the buttermilk, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Preheat a non-stick skillet over medium heat and lightly grease it with butter or oil.
- Pour about a quarter cup of batter for each pancake onto the skillet.
- Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- If making a large batch, keep pancakes warm in a 200°F oven while finishing the rest.
- Serve with maple syrup, fresh berries, or powdered sugar.
