Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, sugar, and salt.
  2. In another bowl, whisk together the buttermilk, eggs, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Preheat a non-stick skillet over medium heat and lightly grease it with butter or oil.
  5. Pour about a quarter cup of batter for each pancake onto the skillet.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  7. If making a large batch, keep pancakes warm in a 200°F oven while finishing the rest.
  8. Serve with maple syrup, fresh berries, or powdered sugar.
