  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 4 oz cream cheese, softened
  • 1 tbsp powdered sugar
  • Optional: chopped pecans or walnuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, and cinnamon, then gradually add to the wet mixture until just combined.
  5. In a small bowl, beat the cream cheese with powdered sugar and a hint of vanilla until smooth.
  6. Use a cookie scoop to form the dough, then flatten and place about a teaspoon of the cream cheese mixture in the center, sealing the dough around it.
  7. Place on a parchment-lined baking sheet and bake for 12-15 minutes until golden around the edges.
  8. Let cool before transferring to a wire rack and optionally drizzle with glaze.
