- 2 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 4 oz cream cheese, softened
- 1 tbsp powdered sugar
- Optional: chopped pecans or walnuts
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking powder, and cinnamon, then gradually add to the wet mixture until just combined.
- In a small bowl, beat the cream cheese with powdered sugar and a hint of vanilla until smooth.
- Use a cookie scoop to form the dough, then flatten and place about a teaspoon of the cream cheese mixture in the center, sealing the dough around it.
- Place on a parchment-lined baking sheet and bake for 12-15 minutes until golden around the edges.
- Let cool before transferring to a wire rack and optionally drizzle with glaze.
Notes
For best results, use room temperature ingredients. Chill the dough if needed to prevent spreading.
