  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 2 cups all-purpose flour
  • 1 large egg
  • 1 tsp baking powder
  • 1/4 cup brown sugar (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Beat until creamy and fluffy.
  3. Add the cream cheese, vanilla extract, and egg, and beat until smooth.
  4. In another bowl, whisk together the flour, baking powder, and cinnamon. Gradually add to the wet ingredients, mixing on low speed just until combined.
  5. In a small bowl, mix together the cinnamon and brown sugar for the swirl filling.
  6. Drop a tablespoon of cookie dough onto the baking sheet, add a teaspoon of the cinnamon sugar mixture, and cover with another tablespoon of dough. Press down slightly.
  7. Bake for 10-12 minutes, until edges are golden brown. Let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  8. Optional: Drizzle with icing made from powdered sugar mixed with milk and vanilla extract.
