Instructions
- Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
- Pulse almond flour and powdered sugar together in a food processor.
- Whip egg whites until frothy, gradually adding granulated sugar until stiff peaks form. Add vanilla and food coloring last minute.
- Fold almond flour mixture into egg whites until thick lava-like consistency.
- Pipe small circles onto sheets, leaving space between each, and tap to release air bubbles.
- Let shells rest for 30-60 minutes until tacky.
- Bake for 15-18 minutes, cool completely before removing.
- Prepare buttercream by beating butter until soft, then gradually add powdered sugar and heavy cream until smooth.
- Assemble macarons by pairing shells, piping buttercream onto one, and sandwiching with the other.
- Let set in fridge for a few hours before enjoying.
Notes
Ensure all utensils are clean to avoid meringue issues. Consider using hazelnut flour if almond flour is unavailable.
