Ingredients

  • 1 1/2 cups powdered sugar
  • 3 large egg whites

  • Green food coloring
  • 1/2 cup unsalted butter
  • 1/4 cup heavy cream

Instructions

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Pulse almond flour and powdered sugar together in a food processor.
  3. Whip egg whites until frothy, gradually adding granulated sugar until stiff peaks form. Add vanilla and food coloring last minute.
  4. Fold almond flour mixture into egg whites until thick lava-like consistency.
  5. Pipe small circles onto sheets, leaving space between each, and tap to release air bubbles.
  6. Let shells rest for 30-60 minutes until tacky.
  7. Bake for 15-18 minutes, cool completely before removing.
  8. Prepare buttercream by beating butter until soft, then gradually add powdered sugar and heavy cream until smooth.
  9. Assemble macarons by pairing shells, piping buttercream onto one, and sandwiching with the other.
  10. Let set in fridge for a few hours before enjoying.

Notes

Ensure all utensils are clean to avoid meringue issues. Consider using hazelnut flour if almond flour is unavailable.
