Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream the butter and both sugars together until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each, then stir in the vanilla extract.
- Combine the flour, baking powder, and salt in a separate bowl and gradually mix it into the wet ingredients.
- Fold in the colorful sprinkles.
- Scoop tablespoon-sized amounts of dough onto the prepared sheets, rolling each into a ball and rolling in more sprinkles if desired.
- Bake for 10-12 minutes, until the edges are golden and centers are slightly underbaked.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a vegan option, substitute the butter with vegan butter and use flax eggs instead of regular eggs. Chilling the dough for 30 minutes before baking helps maintain shape.
