Description
A rich and dense dessert layered with dried fruits and spices, topped with creamy brandy butter.
Ingredients
Scale
- 2 cups mixed dried fruit (raisins, currants, chopped figs)
- 1/2 cup suet or unsalted butter
- 1 cup brown sugar
- 1 cup fresh breadcrumbs
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1 teaspoon ground allspice
- 1 cup all-purpose flour
- 2 eggs
- 1/4 cup brandy
Instructions
- Prepare your steam setup: You’ll need a large pot or steamer with water. Bring it to a gentle simmer while you prepare the pudding.
- Mix the dried fruit: In a large bowl, combine the mixed dried fruit, a tablespoon of flour, and any optional nuts or spices you wish to add.
- Combine dry ingredients: In another bowl, whisk the flour, sugar, spices, and breadcrumbs together.
- Add the wet ingredients: Make a well in the center of the dry mixture and add in the suet (or butter), eggs, and brandy. Mix thoroughly.
- Pour into a pudding basin: Grease the bowl, then transfer the mixture. Smooth the top.
- Cover: Place a pleated piece of parchment paper on top and secure with string.
- Steam: Carefully place the basin in your pot and let it steam for about 360-480 minutes (6-8 hours).
- Cool and unwrap: Let the pudding cool completely before storing.
- Make the brandy butter: Cream together unsalted butter and powdered sugar until pale, then stir in the brandy.
