Ingredients

  • 2 cups mixed dried fruit (raisins, currants, chopped figs)
  • 1/2 cup suet or unsalted butter
  • 1 cup brown sugar
  • 1 cup fresh breadcrumbs
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/4 cup brandy

Instructions

  1. Prepare your steam setup: You’ll need a large pot or steamer with water. Bring it to a gentle simmer while you prepare the pudding.
  2. Mix the dried fruit: In a large bowl, combine the mixed dried fruit, a tablespoon of flour, and any optional nuts or spices you wish to add.
  3. Combine dry ingredients: In another bowl, whisk the flour, sugar, spices, and breadcrumbs together.
  4. Add the wet ingredients: Make a well in the center of the dry mixture and add in the suet (or butter), eggs, and brandy. Mix thoroughly.
  5. Pour into a pudding basin: Grease the bowl, then transfer the mixture. Smooth the top.
  6. Cover: Place a pleated piece of parchment paper on top and secure with string.
  7. Steam: Carefully place the basin in your pot and let it steam for about 360-480 minutes (6-8 hours).
  8. Cool and unwrap: Let the pudding cool completely before storing.
  9. Make the brandy butter: Cream together unsalted butter and powdered sugar until pale, then stir in the brandy.

Serve warm with brandy butter. Can be stored and re-steamed before serving.
