- 1 cup mixed dried fruit (prunes, raisins, and currants)
- 1/2 cup suet (or plant-based alternative)
- 1 cup breadcrumbs
- 1/2 cup dark brown sugar
- 1 teaspoon ground cinnamon

- 1/2 teaspoon allspice
- 2 eggs
- 1 cup dark beer or ale (or non-alcoholic option like apple juice)
- 1 cup unsalted butter (room temperature) for brandy butter
- 1 cup powdered sugar for brandy butter
- 1/4 cup brandy (or whiskey/rum)
- 1 teaspoon vanilla extract
Instructions
- Prepare the ingredients by chopping any large pieces of dried fruit and mixing them in a bowl. Sprinkle with flour to prevent clumping and set aside.
- Mix the dry ingredients in a large bowl: sift together breadcrumbs, suet, brown sugar, and spices.
- Incorporate the eggs and dark beer, mixing into the dry ingredients until combined to form a thick batter.
- Add your prepared fruits, gently folding them into the batter.
- Prepare a pudding basin by greasing it well with butter and smoothing the batter into the basin.
- Steam the pudding by placing the basin in a pot of simmering water, covering and steaming for about 360 minutes.
- Cool the pudding completely before removing it from the basin and wrap tightly for storage.
- Prepare the brandy butter by beating room temperature butter with powdered sugar until smooth, then mixing in brandy and vanilla.
- Reheat the pudding by steaming it for 60–120 minutes before serving.
