  • 1/2 teaspoon allspice
  • 2 eggs
  • 1 cup dark beer or ale (or non-alcoholic option like apple juice)
  • 1 cup unsalted butter (room temperature) for brandy butter
  • 1 cup powdered sugar for brandy butter
  • 1/4 cup brandy (or whiskey/rum)
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the ingredients by chopping any large pieces of dried fruit and mixing them in a bowl. Sprinkle with flour to prevent clumping and set aside.
  2. Mix the dry ingredients in a large bowl: sift together breadcrumbs, suet, brown sugar, and spices.
  3. Incorporate the eggs and dark beer, mixing into the dry ingredients until combined to form a thick batter.
  4. Add your prepared fruits, gently folding them into the batter.
  5. Prepare a pudding basin by greasing it well with butter and smoothing the batter into the basin.
  6. Steam the pudding by placing the basin in a pot of simmering water, covering and steaming for about 360 minutes.
  7. Cool the pudding completely before removing it from the basin and wrap tightly for storage.
  8. Prepare the brandy butter by beating room temperature butter with powdered sugar until smooth, then mixing in brandy and vanilla.
  9. Reheat the pudding by steaming it for 60–120 minutes before serving.
