- 2 large eggs
- 1 1/2 cups milk (whole or nut milk)
- 4 tbsp butter, melted
- 1 tsp vanilla extract
- Optional add-ins: cranberries, chocolate chips, or peppermint extract
Instructions
- In a mixing bowl, whisk together the flour, baking powder, baking soda, sugar, cinnamon, nutmeg, and salt until well combined.
- In a separate bowl, beat together the eggs, milk, melted butter, and vanilla extract until smooth.
- Create a well in the center of the dry ingredients and pour in the wet mixture. Gently fold until just combined; some lumps are okay.
- Preheat a skillet or griddle over medium heat and lightly grease with butter. Pour about 1/4 cup of batter for each pancake. Cook until bubbles form, then flip and cook until golden brown.
- Serve stacked with toppings such as maple syrup, whipped cream, or fresh fruit.
Notes
Allow the batter to rest for 10 minutes for fluffier pancakes. Serve immediately or keep warm in a low oven.
