- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 1 cup powdered sugar (for rolling)
- 2 tsp vanilla extract
- 2 large eggs
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together cocoa powder, flour, baking powder, and salt.
- In another bowl, beat the granulated sugar and softened butter together until light and fluffy.
- Mix in the eggs one at a time, followed by the vanilla extract.
- Gradually add the dry mixture into the wet mixture and mix until just combined.
- Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
- Using a cookie scoop, roll tablespoons of dough into balls and coat each ball in powdered sugar.
- Place the cookies on the prepared baking sheet, leaving space between them, and bake for 10-12 minutes.
- Let them rest on the baking sheet for a few minutes before transferring to wire rack to cool completely.
