Instructions
- Preheat your oven to 350°F (175°C) and line your muffin tins with cupcake liners.
- In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract until smooth. Add the peppermint extract if using.
- Gradually pour the wet ingredients into the dry ingredients while stirring gently. Mix until just combined.
- Fill each cupcake liner about two-thirds full with batter.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool in the pans for 5 minutes before transferring them to a wire rack to cool completely.
- Decorate with buttercream frosting, sprinkles, crushed candy canes, or edible glitter.
