Description

A rich, velvety Chocolate Truffle Cake that creates sweet memories and brings family together.


Ingredients

  • 8 oz dark chocolate (about 70% cocoa)
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup all-purpose flour
  • 1 tsp vanilla extract
  • 1 cup heavy cream (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan.
  2. Melt the dark chocolate and butter together in a heatproof bowl over simmering water, stirring gently.
  3. In another bowl, whisk together the eggs and sugar until light and frothy.
  4. Once the chocolate mixture cools slightly, fold it into the egg mixture gently.
  5. Sift in the flour and vanilla extract, and fold until just combined.
  6. Pour batter into the prepared cake pan and bake for 25-30 minutes.
  7. Allow the cake to cool in the pan for 10 minutes before moving it to a wire rack.
  8. Prepare the ganache by melting chocolate and heavy cream together until smooth, then pour it over the cake.
  9. Let the cake set for at least an hour before slicing.

Notes

Best served with vanilla ice cream or fresh berries. Can be frozen for up to three months.
