Ingredients

  • 1/2 cup brown sugar
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 cup chocolate chips or jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter and sugars together until light and fluffy.
  3. Beat in the egg and vanilla until well combined.
  4. Whisk the flour and cocoa powder, then slowly incorporate into the butter mixture.
  5. If the dough is sticky, refrigerate for 30 minutes.
  6. Scoop tablespoons of dough, roll into balls, and place on a parchment-lined baking sheet.
  7. Press a thumbprint into the center of each ball.
  8. Fill the thumbprints with chocolate chips or jam.
  9. Bake for 10-12 minutes, until edges are set but centers remain slightly soft.
  10. Cool on the baking sheet before transferring to a wire rack.
