Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together the unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, incorporating them fully before adding the next. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour and baking powder. Gradually add this mixture to the wet ingredients, mixing until just combined.
- Fold in the chocolate sprinkles, reserving some for topping.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them 2 inches apart. Press down slightly to flatten.
- Sprinkle extra chocolate sprinkles on top of each cookie.
- Bake for 10-12 minutes, until edges are golden and centers are slightly set. Cookies will firm as they cool.
- Allow to cool on a wire rack before serving.
