Ingredients

- 4 oz high-quality bittersweet chocolate (at least 60% cocoa)
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 2 large eggs
- 2 large egg yolks
- 1 tsp vanilla extract
- 1/4 cup all-purpose flour
- Pinch of salt
Instructions
- Preheat your oven to 425°F (220°C). Grease your ramekins with butter and dust them with flour or cocoa powder.
- Melt the chocolate and butter in a heat-proof bowl over simmering water, stirring until smooth.
- In a mixing bowl, whisk together the eggs and sugar until fluffy. Combine this with the melted chocolate mixture and fold in the flour and salt.
- Divide the batter among the prepared ramekins, filling them about 3/4 full.
- Bake for 12-14 minutes, keeping an eye on them as you want the edges to be firm but the center to remain gooey.
- Let the cakes cool for 1 minute, then carefully invert them onto dessert plates.
- Serve immediately, optionally dusted with powdered sugar, topped with fresh berries or whipped cream.
