  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1/4 cup all-purpose flour
  • Pinch of salt

Instructions

  1. Preheat your oven to 425°F (220°C). Grease your ramekins with butter and dust them with flour or cocoa powder.
  2. Melt the chocolate and butter in a heat-proof bowl over simmering water, stirring until smooth.
  3. In a mixing bowl, whisk together the eggs and sugar until fluffy. Combine this with the melted chocolate mixture and fold in the flour and salt.
  4. Divide the batter among the prepared ramekins, filling them about 3/4 full.
  5. Bake for 12-14 minutes, keeping an eye on them as you want the edges to be firm but the center to remain gooey.
  6. Let the cakes cool for 1 minute, then carefully invert them onto dessert plates.
  7. Serve immediately, optionally dusted with powdered sugar, topped with fresh berries or whipped cream.
