Ingredients

  • 1 cup all-purpose flour (or gluten-free flour)
  • 1 cup granulated sugar (or coconut sugar)
  • 1/2 cup brown sugar
  • 3 large eggs (or flax/chia eggs for vegan)
  • 1/2 cup butter (or unsweetened applesauce)
  • 1 cup cherries (fresh or jarred)
  • 1/2 cup chocolate chips (for coating)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a square baking pan.
  2. Melt the dark chocolate and butter in a bowl until smooth.
  3. Add granulated and brown sugar, whisking to combine.
  4. Incorporate eggs one at a time, whisking vigorously.
  5. In another bowl, mix cocoa powder, flour, and salt, then fold into the wet mixture.
  6. Gently stir in the cherries.
  7. Pour the batter into the prepared pan and bake for 25-30 minutes.
  8. Allow to cool completely, then cut into shapes.
  9. Dip shapes in melted chocolate and chill for 30 minutes to set.
