Ingredients

  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until combined.
  2. In another bowl, beat the egg and mix in the milk, melted butter, and vanilla extract. Slowly pour the wet mixture into the dry ingredients, stirring until just combined.
  3. Gently fold in the chocolate chips, reserving a few to sprinkle on top while cooking.
  4. Heat a non-stick skillet or griddle over medium heat.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown, 1-2 minutes more.
  7. Stack the pancakes, drizzle with maple syrup, and serve warm with your choice of toppings.
