Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut cold butter into dry ingredients until the mixture resembles coarse crumbs.
  4. Dissolve coffee in heavy cream and pour into the dry mix; stir until just combined.
  5. Fold in chocolate chips gently.
  6. Turn dough onto a lightly floured surface, pat into a 1-inch thick circle, and cut into 8 wedges.
  7. Place on baking sheet and bake for 15-20 minutes or until golden brown.
  8. Allow to cool for a few minutes before serving.

Notes

For a sweeter version, consider adding vanilla extract or cinnamon. Chilling the dough for 20 minutes before baking can enhance the flaky texture.
