Ingredients

- 1 lb boneless chicken thighs or breasts, cut into bite-sized pieces
- 4–5 fresh scallions, chopped
- 3 cloves garlic, minced
- 1 inch fresh ginger, minced
- 3 tablespoons soy sauce (low-sodium optional)
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- Water for slurry
Instructions
- Marinate chicken with soy sauce, garlic, and ginger for at least 15 minutes.
- Heat sesame oil in a skillet over medium-high heat.
- Briefly sauté the scallions until fragrant, about 1 minute.
- Add the marinated chicken and stir-fry until cooked through, about 7-10 minutes.
- If adding vegetables, do so towards the end of the cooking process.
- Mix cornstarch with a splash of water to create a slurry, then stir into the skillet until the sauce thickens.
- Serve over rice or noodles, garnished with additional scallions and sesame seeds.
Notes
Adjust soy sauce based on your taste preference. Feel free to experiment with additional vegetables like bell peppers or snap peas.
