Ingredients

  • 1.5 lbs flank steak
  • 1 cup fresh parsley, finely chopped
  • 0.5 cup fresh cilantro, chopped
  • 4 cloves garlic, minced
  • 1 tsp crushed red pepper flakes
  • 0.5 cup extra virgin olive oil
  • 0.25 cup red wine vinegar
  • Salt, to taste

Instructions

  1. Prepare the chimichurri sauce by combining parsley, cilantro, garlic, red pepper flakes, olive oil, red wine vinegar, and salt in a bowl. Let sit for 30 minutes.
  2. Marinate the flank steak by pouring half of the chimichurri sauce over it in a dish or resealable bag. Reserve the other half for serving. Marinate for at least 1 hour or overnight.
  3. Preheat the grill or skillet over medium-high heat. Grill the steak for 5-7 minutes per side until desired doneness is achieved.
  4. Let the cooked steak rest for 10 minutes to redistribute juices, then slice against the grain.
  5. Drizzle with reserved chimichurri sauce and serve with your favorite sides.
