Description

A comforting blend of elbow macaroni, seasoned ground beef, chili beans, and melted cheese, perfect for cozy family dinners.


Ingredients

  • 1 lb ground beef (or turkey or plant-based meat)
  • 8 oz elbow macaroni
  • 1 can (15 oz) chili beans (black, kidney, or pinto)
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups shredded cheddar cheese
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside, drizzling with olive oil to prevent sticking.
  2. In a large skillet, brown the ground beef over medium-high heat until no longer pink. Drain excess grease.
  3. Add diced onions and minced garlic to the skillet, sauté until onions are translucent.
  4. Stir in diced tomatoes, chili beans, chili powder, cumin, and oregano. Simmer for about 10 minutes.
  5. In a large bowl, combine the meat mixture with the pasta and half of the cheese.
  6. Transfer to a greased casserole dish and top with remaining cheese. Cover with foil.
  7. Preheat oven to 350°F (175°C) and bake for 25 minutes. Remove foil and bake for another 10 minutes until cheese is bubbly and golden.
  8. Let cool slightly before serving. Enjoy with a side salad or crusty bread.
