- 1 lb ground beef (or turkey or plant-based meat)
- 8 oz elbow macaroni
- 1 can (15 oz) chili beans (black, kidney, or pinto)
- 1 can (14.5 oz) diced tomatoes
- 2 cups shredded cheddar cheese
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp oregano
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Cook the pasta according to package instructions. Drain and set aside, drizzling with olive oil to prevent sticking.
- In a large skillet, brown the ground beef over medium-high heat until no longer pink. Drain excess grease.
- Add diced onions and minced garlic to the skillet, sauté until onions are translucent.
- Stir in diced tomatoes, chili beans, chili powder, cumin, and oregano. Simmer for about 10 minutes.
- In a large bowl, combine the meat mixture with the pasta and half of the cheese.
- Transfer to a greased casserole dish and top with remaining cheese. Cover with foil.
- Preheat oven to 350°F (175°C) and bake for 25 minutes. Remove foil and bake for another 10 minutes until cheese is bubbly and golden.
- Let cool slightly before serving. Enjoy with a side salad or crusty bread.
