- 1 lb boneless, skinless chicken (breast or thighs)
- 8 oz cream cheese
- 2 cups shredded cheese (cheddar and Monterey Jack)
- 1 can diced green chilies
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 cup sour cream or plain Greek yogurt
- Tortilla chips or veggies (for serving)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the chicken in a sauté pan over medium-high heat until browned and cooked through. Season with salt, pepper, cumin, and chili powder.
- Prepare the queso by sautéing onion and garlic in the same pan until soft. Stir in cream cheese until smooth, then add shredded cheese until melted.
- Mix the cooked chicken and green chilies into the cheese mixture, followed by sour cream.
- Pour the mixture into a greased baking dish. Sprinkle extra cheese on top and bake for 20-25 minutes or until bubbly.
- Garnish with cilantro and serve with tortilla chips or veggies.
Notes
For a vegetarian option, substitute chicken with sautéed mushrooms or zucchini. Make sure cream cheese is at room temperature for easy mixing.
