  • 8 oz cream cheese
  • 2 cups shredded cheese (cheddar and Monterey Jack)
  • 1 can diced green chilies
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 cup sour cream or plain Greek yogurt
  • Tortilla chips or veggies (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the chicken in a sauté pan over medium-high heat until browned and cooked through. Season with salt, pepper, cumin, and chili powder.
  3. Prepare the queso by sautéing onion and garlic in the same pan until soft. Stir in cream cheese until smooth, then add shredded cheese until melted.
  4. Mix the cooked chicken and green chilies into the cheese mixture, followed by sour cream.
  5. Pour the mixture into a greased baking dish. Sprinkle extra cheese on top and bake for 20-25 minutes or until bubbly.
