Ingredients

  • 1 can of Chickpeas, drained and rinsed
  • 1 cup Lentils, rinsed
  • 2 medium Carrots, peeled and chopped
  • 2 cloves Garlic, minced
  • 3 tablespoons Olive Oil
  • Fresh Herbs (Parsley or Cilantro), chopped
  • 1 teaspoon Cumin
  • Juice of 1 Lemon
  • Salt and Pepper, to taste

Instructions

  1. Rinse the lentils and bring them to a boil in a pot of salted water. Cook for 20-25 minutes until tender but still firm. Drain and set aside.
  2. If using canned chickpeas, drain and rinse them. If using dried, soak overnight and boil until tender.
  3. Peel and finely chop the carrots, then sauté them in a skillet with olive oil over medium heat for about 5 minutes. Add minced garlic and sauté for another minute.
  4. Combine lentils, chickpeas, sautéed carrots with garlic, and your chosen herbs in a large bowl.
  5. Drizzle olive oil and lemon juice over the mixture. Sprinkle with cumin and season with salt and pepper.
  6. Toss gently to mix all ingredients, allowing flavors to blend for a few minutes.
  7. Serve warm or let it chill in the fridge for a future meal.

Notes

For added texture, you can include zucchini or bell peppers. Adjust seasoning to your taste, ensuring all flavors are balanced.
