Ingredients

- 1 can of Chickpeas, drained and rinsed
- 1 cup Lentils, rinsed
- 2 medium Carrots, peeled and chopped
- 2 cloves Garlic, minced
- 3 tablespoons Olive Oil
- Fresh Herbs (Parsley or Cilantro), chopped
- 1 teaspoon Cumin
- Juice of 1 Lemon
- Salt and Pepper, to taste
Instructions
- Rinse the lentils and bring them to a boil in a pot of salted water. Cook for 20-25 minutes until tender but still firm. Drain and set aside.
- If using canned chickpeas, drain and rinse them. If using dried, soak overnight and boil until tender.
- Peel and finely chop the carrots, then sauté them in a skillet with olive oil over medium heat for about 5 minutes. Add minced garlic and sauté for another minute.
- Combine lentils, chickpeas, sautéed carrots with garlic, and your chosen herbs in a large bowl.
- Drizzle olive oil and lemon juice over the mixture. Sprinkle with cumin and season with salt and pepper.
- Toss gently to mix all ingredients, allowing flavors to blend for a few minutes.
- Serve warm or let it chill in the fridge for a future meal.
Notes
For added texture, you can include zucchini or bell peppers. Adjust seasoning to your taste, ensuring all flavors are balanced.
