- 4 bone-in, skin-on chicken thighs
- 1 cup heavy cream
- 4 cloves fresh garlic, minced
- 2 tablespoons unsalted butter
- 1 cup chicken broth
- 1 tablespoon fresh thyme or rosemary, chopped
- Salt and pepper to taste
Instructions
- Pat the chicken thighs dry with paper towels and season with salt and pepper.
- In a large skillet over medium-high heat, melt butter until bubbly. Add chicken thighs skin side down and sear for 6-7 minutes until golden brown. Flip and cook for another 5 minutes. Remove chicken and set aside.
- In the same skillet, add more butter if needed and sauté minced garlic for 1-2 minutes until fragrant.
- Pour in chicken broth, scraping up brown bits. Let simmer for 1 minute, then stir in heavy cream and return chicken thighs to skillet.
- Sprinkle herbs and season the sauce with salt and pepper. Simmer for 10-15 minutes until chicken is cooked through and sauce thickens.
- Serve chicken thighs over rice, mashed potatoes, or pasta, drizzling the creamy sauce over the top.
Notes
For a thicker sauce, let it reduce longer or mix 1 teaspoon of cornstarch with a tablespoon of water and add to the sauce. Can substitute half-and-half for lighter creaminess.
