Ingredients
- Boneless, skinless chicken (breast or thighs)
- Taco seasoning
- Corn or flour tortillas
- Black or pinto beans
- Diced tomatoes or salsa
- Cheddar cheese
- Monterey Jack cheese
- Fresh cilantro
- Vegetables (bell peppers, onions, or corn)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, cook chopped chicken with taco seasoning until no longer pink.
- In a greased baking dish, layer tortillas, cooked chicken, beans, diced tomatoes, and cheese; repeat layers.
- Cover with foil and bake for 25-30 minutes. Remove foil and bake another 10-15 minutes until cheese is bubbly and golden.
- Let cool slightly, garnish with cilantro, and serve warm.
Notes
Feel free to customize with jalapeños or sour cream. Use shredded rotisserie chicken for quicker prep.
