  • Boneless, skinless chicken (breast or thighs)
  • Taco seasoning
  • Corn or flour tortillas
  • Black or pinto beans
  • Diced tomatoes or salsa
  • Cheddar cheese
  • Monterey Jack cheese
  • Fresh cilantro
  • Vegetables (bell peppers, onions, or corn)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook chopped chicken with taco seasoning until no longer pink.
  3. In a greased baking dish, layer tortillas, cooked chicken, beans, diced tomatoes, and cheese; repeat layers.
  4. Cover with foil and bake for 25-30 minutes. Remove foil and bake another 10-15 minutes until cheese is bubbly and golden.
