Ingredients

  • 4 boneless chicken breasts
  • 2 ripe pears (like Bartlett or Anjou), chopped
  • 1 cup goat cheese or brie, crumbled
  • 2 cloves garlic, minced
  • 2 tablespoons fresh thyme or rosemary, chopped
  • 2 tablespoons unsalted butter or olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Chop the pears into small cubes and mix them with cheese, minced garlic, chopped herbs, and a pinch of salt and pepper in a bowl.
  3. Slice a pocket into the side of each chicken breast without cutting all the way through.
  4. Spoon the pear and cheese mixture generously into each chicken pocket.
  5. Heat butter or olive oil in a skillet over medium-high heat and sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
  6. Bake the chicken in the preheated oven for about 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for about 5 minutes before slicing and serve warm.
