- 4 boneless chicken breasts
- 2 ripe pears (like Bartlett or Anjou), chopped
- 1 cup goat cheese or brie, crumbled
- 2 cloves garlic, minced
- 2 tablespoons fresh thyme or rosemary, chopped
- 2 tablespoons unsalted butter or olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Chop the pears into small cubes and mix them with cheese, minced garlic, chopped herbs, and a pinch of salt and pepper in a bowl.
- Slice a pocket into the side of each chicken breast without cutting all the way through.
- Spoon the pear and cheese mixture generously into each chicken pocket.
- Heat butter or olive oil in a skillet over medium-high heat and sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
- Bake the chicken in the preheated oven for about 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for about 5 minutes before slicing and serve warm.
