  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 onion, sliced
  • Fresh parsley or cilantro, for garnish
  • Tahini sauce or creamy garlic yogurt, for drizzling

Instructions

  1. Prepare the marinade by combining olive oil, shawarma spice mix, and a pinch of salt in a bowl. Coat the chicken and marinate for at least 30 minutes.
  2. Cook the rice according to package instructions.
  3. Heat a skillet over medium-high heat with some oil, then add the marinated chicken and cook until golden brown (about 6-8 minutes).
  4. Toss in the sliced vegetables and sauté until tender (about 5 minutes).
  5. Assemble the bowl with a layer of cooked rice, followed by sautéed vegetables and chicken. Drizzle with sauce and top with fresh herbs.
  6. Serve warm with pita bread or a side salad.
