- 2 tbsp shawarma spice mix (cumin, coriander, paprika, cinnamon, garlic powder)
- 2 tbsp olive oil
- 1 cup white or basmati rice
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 onion, sliced
- Fresh parsley or cilantro, for garnish
- Tahini sauce or creamy garlic yogurt, for drizzling
Instructions
- Prepare the marinade by combining olive oil, shawarma spice mix, and a pinch of salt in a bowl. Coat the chicken and marinate for at least 30 minutes.
- Cook the rice according to package instructions.
- Heat a skillet over medium-high heat with some oil, then add the marinated chicken and cook until golden brown (about 6-8 minutes).
- Toss in the sliced vegetables and sauté until tender (about 5 minutes).
- Assemble the bowl with a layer of cooked rice, followed by sautéed vegetables and chicken. Drizzle with sauce and top with fresh herbs.
- Serve warm with pita bread or a side salad.
Notes
Customize your bowl with additional toppings like hummus or spicy sauces. For a vegetarian version, replace chicken with jackfruit or chickpeas.
