Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs (preferably panko)
  • 1 cup marinara sauce
  • 1 cup fresh mozzarella, shredded
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon olive oil
  • 1/2 cup all-purpose flour
  • 1 egg, beaten
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pound the chicken breasts to about a half-inch thickness.
  3. Set up a dredging station with seasoned flour, egg wash, and breadcrumbs mixed with oregano, salt, and pepper.
  4. Dip each chicken breast in flour, egg wash, and then the breadcrumb mixture, ensuring they’re well coated.
  5. Heat olive oil in a skillet over medium heat and cook the breaded chicken until golden brown, about 3-4 minutes per side.
  6. Place the cooked chicken in a baking dish, top with marinara sauce and mozzarella cheese, and sprinkle with fresh basil.
  7. Bake for about 20 minutes or until the cheese is bubbly and begins to brown.
  8. Serve hot, garnished with more fresh herbs.

Notes

For a lighter version, use less cheese or substitute whole-grain breadcrumbs. Pair with salads or pasta for a complete meal.
