- 4 boneless, skinless chicken breasts
- 1 cup breadcrumbs (preferably panko)
- 1 cup marinara sauce
- 1 cup fresh mozzarella, shredded
- 2 tablespoons fresh basil, chopped
- 1 tablespoon olive oil
- 1/2 cup all-purpose flour
- 1 egg, beaten
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Pound the chicken breasts to about a half-inch thickness.
- Set up a dredging station with seasoned flour, egg wash, and breadcrumbs mixed with oregano, salt, and pepper.
- Dip each chicken breast in flour, egg wash, and then the breadcrumb mixture, ensuring they’re well coated.
- Heat olive oil in a skillet over medium heat and cook the breaded chicken until golden brown, about 3-4 minutes per side.
- Place the cooked chicken in a baking dish, top with marinara sauce and mozzarella cheese, and sprinkle with fresh basil.
- Bake for about 20 minutes or until the cheese is bubbly and begins to brown.
- Serve hot, garnished with more fresh herbs.
Notes
For a lighter version, use less cheese or substitute whole-grain breadcrumbs. Pair with salads or pasta for a complete meal.
