Chicken Parmigiana

Description

A comforting Chicken Parmigiana recipe with crispy breaded chicken, rich marinara sauce, and melted mozzarella.


Ingredients

  • 4 boneless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 cup fresh mozzarella cheese, sliced
  • 1/4 cup fresh basil, chopped
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • Olive oil for frying

Instructions

  1. Preheat your oven to 375°F.
  2. Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness.
  3. Whisk two eggs in a shallow bowl.
  4. Mix breadcrumbs and grated Parmesan cheese in another shallow bowl.
  5. Put flour in a third bowl.
  6. Dredge each chicken breast in flour, then dip into the egg, and finally coat it in the breadcrumb mixture.
  7. Heat olive oil in a large skillet over medium heat.
  8. Add the breaded chicken to the skillet and fry for 4-5 minutes on each side.
  9. Remove from the skillet and set aside.
  10. Spread a thin layer of marinara sauce in a baking dish.
  11. Place the fried chicken on top, spoon more sauce over each piece, and finish with sliced mozzarella cheese and basil.
  12. Bake for 15-20 minutes until the cheese is melted and bubbly.
  13. Allow to rest for a couple of minutes before slicing and serve with pasta or salad.

Notes

For a lighter version, use skinless chicken breasts and low-fat cheese.
