Description
A comforting Chicken Parmigiana recipe with crispy breaded chicken, rich marinara sauce, and melted mozzarella.

- 4 boneless chicken breasts
- 1 cup panko breadcrumbs
- 1/2 cup freshly grated Parmesan cheese
- 2 cups marinara sauce
- 1 cup fresh mozzarella cheese, sliced
- 1/4 cup fresh basil, chopped
- 2 large eggs
- 1/2 cup all-purpose flour
- Olive oil for frying
Instructions
- Preheat your oven to 375°F.
- Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness.
- Whisk two eggs in a shallow bowl.
- Mix breadcrumbs and grated Parmesan cheese in another shallow bowl.
- Put flour in a third bowl.
- Dredge each chicken breast in flour, then dip into the egg, and finally coat it in the breadcrumb mixture.
- Heat olive oil in a large skillet over medium heat.
- Add the breaded chicken to the skillet and fry for 4-5 minutes on each side.
- Remove from the skillet and set aside.
- Spread a thin layer of marinara sauce in a baking dish.
- Place the fried chicken on top, spoon more sauce over each piece, and finish with sliced mozzarella cheese and basil.
- Bake for 15-20 minutes until the cheese is melted and bubbly.
- Allow to rest for a couple of minutes before slicing and serve with pasta or salad.
Notes
For a lighter version, use skinless chicken breasts and low-fat cheese.
