- 1 cup breadcrumbs (regular or gluten-free)
- 2 eggs
- 1 cup diced onions
- 3 cloves minced garlic
- 1/4 cup fresh parsley or 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp pepper
- 1 tbsp Worcestershire sauce
- 1/2 cup diced bell peppers or shredded carrots
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the ground chicken, breadcrumbs, diced onions, garlic, eggs, and herbs/spices.
- Mix gently with your hands until combined, being careful not to overwork the meat.
- Shape the mixture into a loaf and place it in a lined baking dish or on a baking sheet.
- Bake for 60 minutes, or until the internal temperature reaches 165°F (74°C). Brush with a mixture of ketchup and brown sugar during the last 15 minutes if desired.
- Let it rest for a few minutes before slicing to help the juices redistribute.
Notes
