Description
A vibrant medley of marinated chicken, fluffy rice, and fresh veggies drizzled with homemade tzatziki sauce, perfect for family gatherings and customizable for everyone.
Ingredients
Scale
- 1 lb boneless chicken thighs (or breasts)
- 1 cup Greek yogurt
- 1 cucumber, grated
- 2 cloves garlic, minced
- 2 tbsp fresh dill, chopped
- 1 lemon, juiced
- 1 tsp cumin
- 1 tsp paprika
- Salt, to taste
- 1 cup rice or quinoa, cooked
- 1 bell pepper, sliced
- 1 tomato, diced
- 1/2 red onion, sliced
- Olive oil, for cooking
Instructions
- Marinate your chicken: Combine olive oil, lemon juice, minced garlic, cumin, paprika, and salt. Let the chicken rest in this marinade for at least 30 minutes (or up to overnight in the refrigerator).
- Cook the chicken: Heat a skillet over medium-high heat, add olive oil, and cook the chicken until golden brown and cooked through—about 6-7 minutes per side. Let it rest for a few moments before slicing it thinly.
- Prepare the tzatziki sauce: Mix Greek yogurt with grated cucumbers, minced garlic, chopped dill, lemon juice, and salt. Adjust to taste.
- Assemble the bowls: Start with a base of rice or quinoa, layer on the sliced chicken, and top with fresh veggies—cucumber, tomatoes, and any other favorites. Drizzle with tzatziki sauce.
- Garnish and serve: Sprinkle with freshly chopped herbs or feta cheese for extra flavor.
Notes
For a lighter option, consider using a base of leafy greens instead of grains. You can easily substitute turkey or tofu for the chicken, and use dairy-free yogurt for the tzatziki.
