Chicken Alfredo Stuffed Shells

Description

Delicious jumbo pasta shells filled with creamy chicken Alfredo, baked to perfection and topped with cheese.


Ingredients

  • 12 jumbo pasta shells
  • 2 cups cooked chicken (breast or thighs)
  • 1 jar (15 oz) Alfredo sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 cups fresh spinach or 1 cup sautéed mushrooms (optional)
  • Fresh parsley or basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil salted water and cook the jumbo pasta shells for 2-3 minutes less than package instructions. Drain and rinse with cold water.
  3. In a skillet, sauté minced garlic in olive oil until fragrant. Add cooked chicken and spinach/mushrooms, then mix in half of the Alfredo sauce.
  4. Stuff each pasta shell with the chicken mixture and arrange in a baking dish.
  5. Pour the remaining Alfredo sauce over the shells and sprinkle with mozzarella and Parmesan cheese.
  6. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly.
  7. Allow to cool for a few minutes before serving.

Notes

For a lighter option, substitute some cream with Greek yogurt. You can also use shredded zucchini for a vegetarian version.
