- 2 cups cooked chicken (breast or thighs), diced
- 2 cups heavy cream
- 3 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 cup freshly grated Parmesan cheese
- 1 cup mushrooms (cremini or button), sliced
- 2 cups penne or rotini pasta, cooked
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat your oven to 375°F (190°C). Gather your ingredients and chop the chicken, veggies, and garlic.
- Melt butter in a skillet over medium heat and add diced chicken, seasoned with salt and pepper. Sauté until browned, about 5-7 minutes. Remove and set aside.
- Add more butter if needed and sauté the garlic until fragrant. Toss in the mushrooms and cook until tender, about 4-5 minutes.
- Pour in heavy cream and bring to a gentle simmer. Gradually whisk in grated Parmesan cheese until melted and smooth. Add a splash of pasta water if too thick.
- Mix together cooked pasta, chicken, sautéed mushrooms, and Alfredo sauce in a large bowl. Stir in some fresh herbs for flavor. Transfer to a greased baking dish and top with additional cheese.
- Bake for about 25-30 minutes or until bubbly and golden brown on top. Let it rest for a few minutes before serving.
Notes
For variety, substitute chicken with shrimp or tofu. You can add veggies like spinach or broccoli for extra nutrition.
