Ingredients

  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 2 cups cherries, pitted and roughly chopped
  • 1/2 cup unsalted pistachios, chopped
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the crust: In a mixing bowl, combine graham cracker crumbs with melted butter and sugar until it resembles wet sand. Press firmly into the bottom of a springform pan and bake for 10 minutes. Allow it to cool.
  3. Make the filling: In a large bowl, beat the cream cheese until creamy. Gradually add the sugar, blending until combined. Mix in sour cream and vanilla extract until smooth.
  4. Incorporate the cherries into the cream cheese mixture, being careful not to break them down too much.
  5. Pour the filling into the cooled crust, smoothing the top with a spatula.
  6. Bake at 325°F (160°C) for about 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool inside for an hour.
  7. Chill in the refrigerator for at least 4 hours, or overnight if time allows.
  8. Before serving, sprinkle chopped pistachios on top for added crunch.
