- 8 oz cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 2 cups cherries, pitted and roughly chopped
- 1/2 cup unsalted pistachios, chopped
- 1 1/2 cups graham cracker crumbs
- 1/2 cup butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the crust: In a mixing bowl, combine graham cracker crumbs with melted butter and sugar until it resembles wet sand. Press firmly into the bottom of a springform pan and bake for 10 minutes. Allow it to cool.
- Make the filling: In a large bowl, beat the cream cheese until creamy. Gradually add the sugar, blending until combined. Mix in sour cream and vanilla extract until smooth.
- Incorporate the cherries into the cream cheese mixture, being careful not to break them down too much.
- Pour the filling into the cooled crust, smoothing the top with a spatula.
- Bake at 325°F (160°C) for about 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool inside for an hour.
- Chill in the refrigerator for at least 4 hours, or overnight if time allows.
- Before serving, sprinkle chopped pistachios on top for added crunch.
Notes
Allow cheesecake to come to room temperature before serving for the best texture.
