- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 1/2 cups fresh cherries, pitted
- 1/2 cup chopped pistachios
- 1 1/2 cups graham cracker crumbs
- 1/2 cup butter, melted
- 1 tsp vanilla extract
- 3 large eggs
- 2 tbsp lemon juice
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of a springform pan. Bake for about 10 minutes until golden, then let cool.
- In a large bowl, beat the cream cheese until creamy. Gradually add the granulated sugar, mixing until smooth.
- Add the eggs one at a time, beating well after each addition. Stir in the lemon juice and vanilla until fully incorporated.
- Fold in half of the fresh cherries into the cheesecake mixture, reserving some for topping. Pour this mixture over your cooled crust, smoothing the top with a spatula.
- Bake for 55-60 minutes, or until the edges are set but the center jiggles slightly. Turn off the oven and leave the cheesecake inside for about an hour.
- Once cool, refrigerate for at least four hours, preferably overnight.
- For the topping, mix reserved cherries with sugar and chopped pistachios, then spread over the chilled cheesecake before serving.
- Slice carefully, serve chilled, and enjoy!
Notes
For best results, bake the cheesecake in a water bath to prevent cracking and allow it to cool gradually in the oven.
