Ingredients

  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 1/2 cups fresh cherries, pitted
  • 1/2 cup chopped pistachios
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 1 tsp vanilla extract
  • 3 large eggs
  • 2 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of a springform pan. Bake for about 10 minutes until golden, then let cool.
  2. In a large bowl, beat the cream cheese until creamy. Gradually add the granulated sugar, mixing until smooth.
  3. Add the eggs one at a time, beating well after each addition. Stir in the lemon juice and vanilla until fully incorporated.
  4. Fold in half of the fresh cherries into the cheesecake mixture, reserving some for topping. Pour this mixture over your cooled crust, smoothing the top with a spatula.
  5. Bake for 55-60 minutes, or until the edges are set but the center jiggles slightly. Turn off the oven and leave the cheesecake inside for about an hour.
  6. Once cool, refrigerate for at least four hours, preferably overnight.
  7. For the topping, mix reserved cherries with sugar and chopped pistachios, then spread over the chilled cheesecake before serving.
  8. Slice carefully, serve chilled, and enjoy!

Notes

For best results, bake the cheesecake in a water bath to prevent cracking and allow it to cool gradually in the oven.
