- 1 cup almond milk (or coconut milk, or regular dairy milk)
- 1 cup fresh cherries, chopped (reserve a few for garnish)
- 1–2 tablespoons honey or maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
Instructions
- In a mixing bowl, combine chia seeds with milk and stir well to avoid clumps.
- Mix in sweetener and vanilla extract.
- Gently fold in chopped cherries, reserving some for garnish.
- Cover and refrigerate for at least 4 hours or overnight to allow the seeds to absorb liquid.
- Once ready, stir and portion into bowls. Top with reserved cherries, nuts, or extra sweetener if desired.
Notes
For best texture, stir the pudding a couple of times while it sets to prevent clumping. Serve chilled for maximum enjoyment.
