- 3 large eggs
- 1 cup granulated sugar
- 1 cup all-purpose flour (or almond flour for gluten-free)
- 1 teaspoon baking powder
- ¼ cup milk (or almond/soy milk)
- 2 tablespoons unsalted butter (or coconut oil)
- 8 oz block cream cheese
- ½ cup powdered sugar
- 1 teaspoon vanilla extract (or almond extract)
- 1 cup fresh cherries, chopped (or canned/frozen)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together eggs and granulated sugar until light and fluffy. Gradually fold in flour, baking powder, and milk until well combined.
- Pour the batter onto the prepared baking sheet and bake for 12-15 minutes, until golden and springs back when touched.
- Invert the cake onto a powdered sugar-dusted towel and roll tightly to cool completely.
- In a bowl, beat cream cheese with powdered sugar and vanilla extract until smooth.
- Once the cake is cooled, unroll it gently and spread the cheesecake filling evenly, then add chopped cherries.
- Roll the cake back up without the towel and place seam-side down.
- Cover with plastic wrap and refrigerate for at least 2 hours to set.
- Slice and serve, optionally with whipped cream or chocolate sauce.
Notes
For best results, allow the cake to chill overnight. Use parchment paper while rolling to prevent cracks.
