- 1 lb ground beef
- 1 lb ground pork
- 1 cup mozzarella cheese, cubed
- 1 cup panko breadcrumbs
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh thyme, chopped
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 large egg
- 1 tsp salt
- 1/2 tsp pepper
- 1 tbsp Worcestershire sauce
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine ground meat, breadcrumbs, onion, garlic, herbs, egg, salt, pepper, and Worcestershire sauce. Mix gently until well incorporated.
- Prepare cheese filling by cutting into small cubes or shredding.
- Scoop a small amount of meat mixture, flatten it, place cheese in the center, and mold the meat around it to form a ball.
- Heat a skillet over medium heat, add oil, and sear the meatloaf bites in batches for about 5-6 minutes until browned.
- Transfer seared bites to a baking sheet and bake for 15-20 minutes or until internal temperature reaches 160°F (71°C).
- Let them cool for a few minutes before serving.
Notes
Make bites ahead and refrigerate before cooking. Garnish with fresh herbs and serve with dipping sauces like marinara or ranch.
