  • 4 large flour tortillas
  • 2 cloves garlic, minced
  • 2 tablespoons butter or oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Optional veggies: bell peppers, onions, or black beans

Instructions

  1. Prepare the Potatoes: Boil diced potatoes in salted water until fork-tender, about 15 minutes. Drain and return to pot to dry.
  2. Make the Filling: In a skillet, melt butter over medium heat, add garlic and sauté until fragrant. Add potatoes, cheeses, and spices; mash together until creamy.
  3. Warm the Tortillas: Heat tortillas in the microwave for 20 seconds or in a dry skillet until pliable.
  4. Assemble the Burritos: Spoon potato filling onto a tortilla, sprinkle with herbs, fold and roll tightly.
  5. Cook the Burritos: In a skillet over medium heat, cook burritos seam-side down until golden and crispy, about 3-5 minutes.
  6. Serve and Enjoy: Cut in half and serve with salsa or guacamole.

Notes

For a vegan option, replace cheese with dairy-free cheese and use olive oil.
