- 2 tablespoons butter or oil
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon chili powder

Instructions
- Prepare the Potatoes: Boil diced potatoes in salted water until fork-tender, about 15 minutes. Drain and return to pot to dry.
- Make the Filling: In a skillet, melt butter over medium heat, add garlic and sauté until fragrant. Add potatoes, cheeses, and spices; mash together until creamy.
- Warm the Tortillas: Heat tortillas in the microwave for 20 seconds or in a dry skillet until pliable.
- Assemble the Burritos: Spoon potato filling onto a tortilla, sprinkle with herbs, fold and roll tightly.
- Cook the Burritos: In a skillet over medium heat, cook burritos seam-side down until golden and crispy, about 3-5 minutes.
- Serve and Enjoy: Cut in half and serve with salsa or guacamole.
