  • 2 large Potatoes (Yukon Gold or Russet)
  • 1 cup Cheese (Cheddar, Monterey Jack, or Pepper Jack)
  • 4 Tortillas (flour or corn)
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1/2 tsp Black Pepper
  • Fresh herbs (cilantro or chives) for garnish
  • Optional: cooked chicken, black beans, or sautéed vegetables

Instructions

  1. Peel and dice your potatoes into even-sized chunks. Place them in a pot, cover with water, and bring to a boil. Cook until fork-tender.
  2. Heat a skillet over medium heat. Add a touch of oil and sauté diced onions until translucent. Add minced garlic and sauté for another minute.
  3. Drain the boiled potatoes, return to the pot, and mash gently. Stir in the sautéed onions, garlic, cheese, spices, and fresh herbs until melted together.
  4. Take a tortilla and spoon a generous amount of the cheesy potato mixture into the center. Fold in the sides and roll tightly.
  5. Place the burritos seam-side down in the skillet and cook for 3-4 minutes on each side until golden brown and crispy.
  6. Serve hot, accompanied by salsa or sour cream.

Notes

For additional flavor, consider adding jalapeños or other vegetables. Ensure not to overcook the potatoes to maintain their texture.
