- 2 large Potatoes (Yukon Gold or Russet)
- 1 cup Cheese (Cheddar, Monterey Jack, or Pepper Jack)
- 4 Tortillas (flour or corn)
- 1 Onion, diced
- 2 cloves Garlic, minced
- 1 tsp Cumin
- 1 tsp Paprika
- 1/2 tsp Black Pepper
- Fresh herbs (cilantro or chives) for garnish
- Optional: cooked chicken, black beans, or sautéed vegetables
Instructions
- Peel and dice your potatoes into even-sized chunks. Place them in a pot, cover with water, and bring to a boil. Cook until fork-tender.
- Heat a skillet over medium heat. Add a touch of oil and sauté diced onions until translucent. Add minced garlic and sauté for another minute.
- Drain the boiled potatoes, return to the pot, and mash gently. Stir in the sautéed onions, garlic, cheese, spices, and fresh herbs until melted together.
- Take a tortilla and spoon a generous amount of the cheesy potato mixture into the center. Fold in the sides and roll tightly.
- Place the burritos seam-side down in the skillet and cook for 3-4 minutes on each side until golden brown and crispy.
- Serve hot, accompanied by salsa or sour cream.
Notes
For additional flavor, consider adding jalapeños or other vegetables. Ensure not to overcook the potatoes to maintain their texture.
